Being a New Yorker, I see a lot of fried rice here and there and I do think it’s yummy. But I never even thought to make it myself – way too intimidating! So I was super thrilled when I was sent this recipe for fried rice energy bites that are not only easy to make at home, but also super healthy. Time to dust off my wok! It’s another installment in our Fake Supermom recipe series and this one has a most excellent serving technique that will wow your family – see below.

This recipe is from an invaluable site called superhealthykids.com. Run by three super savvy women Superhealthykids.com (hey, kind of like CloudMom!) is dedicated to promoting healthy eating habits for kids (and parents too!). They have loads of healthy recipes for kids of all ages as well as family meal plans. The site’s founder, Amy, says she makes these rice bites at least once a week. They’re a great way to use up leftover rice, chicken, and/or veggies, three things I often have sitting in my fridge.

- 2 cups cooked brown rice (make sure it’s soft and a bit sticky – add extra water in cooking if you have to)
- 1 cup finely chopped cooked chicken
- 3 eggs
- 1 small zucchini, chopped ultra finely
- 1 small yellow squash, chopped ultra finely
- 1/2 cup bell pepper any color, chopped finely
- 1 clove garlic
- 2 tablespoons low sodium soy sauce
- 1 tablespoon olive oil
- Add 1 tablespoon olive oil to skillet and heat on medium
- Add zucchini, yellow squash, bell peppers and garlic and saute until softened, about 8 minutes
- Once veggies are soft, break 3 eggs into a small bowl and whip slightly to combine.
- Pour eggs over vegetables and move eggs around while they cook.
- Add the rice and cooked chicken and stir again until everything is mixed together.
- Add soy sauce for seasoning and stir one last time.
Amy has a great freezing tip for this. Add scoops of fried rice to a muffin tin and pack down. Freeze, then remove and store in freezer safe bags. Makes a great microwaveable lunch!
She also serves these bites in the cutest way! She packs a ramekin full of the fried rice then places it upside down on a plate before lifting off the ramekin. It makes a neat little mound of rice that your kids can dig right into.
