Purple Cabbage Coleslaw

Ever wonder what on earth to do with those intimidating cabbages you see at the marketplace? How on Earth do you prepare something yummy from them? Well, a CloudMom fan offered to share her homemade coleslaw recipe as part of our healthy eating series! Danielle recently prepared this purple cabbage coleslaw for a party and it was a huge success! The recipe really is delicious and super easy, too.
Coldslaw Ingredients:
- 1 head red cabbage
- 1 red onion
- ¼ cup sugar
- 1 cup oil (canola or vegetable)
- 1 cup vinegar (white or apple cider)
- 2 tablespoons sugar
- 1 1/2 teaspoons dry mustard
- 3/4 teaspoon salt
- 3/4 teaspoon pepper
Directions:
Dice cabbage and red onion into bite size pieces and toss with ¼ cup sugar, put into large mixing bowl. Then combine remaining ingredients in small sauce pan and bring to boil. Pour boiling mixture over cabbage, let set for 5 minutes, then mix all together. Chill in refrigerator before eating. Can serve on leaves of romaine lettuce.
