Homemade Healthy Chicken Nuggets

Hello everyone. I am always on the lookout for new healthy things my kids will love. My family too often falls into a “food rut”, eating the same meals on the same days of the week. So I was thrilled when Scarlet Paolicchi of Family Focus Blog offered to send us over her delicious recipe for homemade chicken nuggets. Homemade Chicken Nuggets
My kids love the tender flaky texture of these real homemade chicken nuggets as well as the flavor. I am glad to be able to give them something they enjoy while worrying less about just what kind of ingredients are in them (or even if it is actually chicken). The other bonus is that they are delicious for grown ups too so I am not left cooking two different meals to keep everyone happy and helps me find more time to spend with family at the dinner table. These baked chicken nuggets can be made right away for dinner or frozen for later- they are also great in lunchboxes!
Homemade chicken nuggets are great served with baked potato chips and steamed broccoli or a small salad and rice.

Ingredients:
3 boneless, skinless chicken breasts
2 tsp. paprika
1 egg
½ cup parmesan cheese
½ cup italian breadcrumbs
1 tsp. garlic powder
salt and pepper to taste
Directions:
Preheat oven to 350.
Salt and pepper chicken breasts to taste.
Bake in oven for 10 minutes.
Place HOT chicken directly from oven into the bowl of your hand or stand mixer.
Mix on high until chicken is shredded well.
Add paprika, egg, ¼ cup Parmesan cheese, ¼ Italian breadcrumbs, garlic powder to bowl and mix just until combined.
Scoop out 1-2 Tbsp. of mixture and press into patty shapes.
In a separate bowl combine remaining ¼ cup of Parmesan cheese and Italian breadcrumbs.
Press patties into breadcrumb mixture on both sides.
If you want to freeze for later allow chicken patties to cool completely, layer in waxed paper inside of an airtight container in freezer.
When ready to cook place back in oven preheated to 350 for 10 minutes, flip halfway through if desired.
Be careful not to over cook or your chicken will be dry.
My kids love to dip these homemade chicken nuggets in ketchup. I like to dip them in ranch or BBQ sauce. Sometimes I add hot sauce and dip them blue cheese dressing for a buffalo chicken nugget experience!
