Garlic Green Beans

Hello mums! Winding up my adventure in London with lunch today with one of my closest friends who lives here and I rarely see, so it’s a happy day for me. She’s just a short walk away from our hotel which was such a great surprise. Huge apologies because we had some ripples with our site over the past few days as we try to bring about some changes! Today I’m throwing up a super simple recipe that I love. It’s so simple I don’t know that you can really call it a recipe… ha ha … it’s more just a way of preparing a healthy veggie that has some nice flavor, is healthy, and that both your kiddies and us adults will love. We make it a lot in our house for Sunday dinner and it’s quick and fun.
Ingredients
- Green beans for 6 (or 7!)
- 2-3 cloves garlic, finely chopped
- 1 tablespoon of coconut oil
- Pepper and dash of salt to taste
How to prepare:
Find some fresh, yummy beans — the kind that are so good you love them raw too! Fun to have one of the kids pick ’em out and bag them in their store:
Sit one of you children down and have them trim the ends off of the beans. Mine enjoy using a scissor!
Wash and steam or lightly boil your beans. I always try to steam because I think it keeps more nutrients in there. But when I’m rushing, I confess that I resort to light boiling!
In a saucepan, heat your coconut oil. Please your garlic. Lightly sautee, making sure not to overcook. Add your beans taking care not to add too much water, and stir, allowing to sautee for an additional minute or two.
Voila. Healthy, yummy, hot and a bit different. I also add a dash of pepper and salt is yummy, although I try to keep it to a minimum for the chitlins. We had this last Sunday with a yummy roasted pork that was also super easy, so stay tuned for that recipe next Wednesday.
