Since my visit to my beloved organic guru Aunt Simone in Colorado last Christmas, I’ve been making a concerted effort to find new ways of eating healthy. But this is the first recipe in my series on how to eat healthy as a family! It’s only taken me, um 6 months, to get my act together.

I think eating healthy as a family is probably the best way to make your kids into good eaters – if the kids see you eating candy, of course they will want candy…but if they watch you eat spinach, there is a chance they will eventually try it too. This has happened to me with yoghurt, at least, and with whole wheat crackers.
I’m becoming obsessed with coconut oil. Coconut oil has a high resistance to heat and is supposedly safer to cook on high heats than olive oil. I am finding I can use less than I do other oils. It also has a yummy flavor.
Coconut Oil Health Benefits
Lately we’re hearing a lot about the benefits of benefits of coconut oil, among them: lowering cholesterol, boosting immunity (because it is rich in anti-oxidants), increasing metabolism, skin and hair care because it absorbs easily into the skin, and even stress relief because of its lovely scent. Popping popcorn for the kiddies? Go Coconut? Shining shoes? You get the picture.
I’m starting small with a super simple recipe for broccoli, but if you have other uses for this nifty oil, please share them below!
Broccoli with Coconut Oil
Ingredients:
One head of broccoli
2 tsp coconut oil
Black pepper
Salt
Directions:
Rinse broccoli and divide florets into bite-sized pieces. Melt two teaspoons of coconut oil over medium heat in a wok. Add broccoli. Add a quarter cup of water. Add salt and black pepper to taste. Stir ingredients well to make sure broccoli is well-covered with coconut oil and spices. Cover and let cook for about 10 minutes, stirring occasionally. Try this recipe with chicken, steak or fish. Enjoy!
