WW #46: Cornbread, Sunsets and Smiles


Hello everyone.  Writing from the midst of a long weekend of family time with my parents, siblings, nieces and nephews, I have lots of things to be grateful for.  It is said that gratitude erases negativity… I’ve been trying to embrace that mantra in order to focus on the happy things in front of my eyes, rather than what I sometimes wish were different.

We have had a few bumps in the meal department this weekend.  On Tuesday we drove to Connecticut to begin the holiday with my parents.  A two hour drive took us five hours, and we arrived bleary-eyed at 1 a.m.  We also left my two freshly made lasagnas in the car.  I had planned to freeze and then serve these our party of 20 people tonight (Saturday) for my Mom’s birthday party.   Three days outside in the car does not a safe lasagna make.  Alas, we’re moving on the Boeuf Bourguignon (thankfully, my sister is in charge).

On a brighter note, my cornbread turned out just fine and the kids gobbled it up.  I plan to post the recipe soon.  We also made chocolate mousse, and that turned out thicker than in the past – look for that recipe too coming up soon.

Before the Thanksgiving meal, we attempted to take our Christmas card photo.  Not wanting to spoil the holiday surprise, I’ll just give you all this early glimpse of Hedley.  Getting all 5 to smile (or look less than miserable) simultaneously proved even trickier than in years past.

Here in Connecticut for these few family-filled days, we’ve enjoyed some burning sunsets …

And time with Aunt Kiki and our other aunts and uncles and beloved cousins.  Since Grandma and Grandpa took everyone to a movie Saturday afternoon (thank you!), Mommy was able to write up this weekly wrap up.  Thanks G & G!
